Grease interceptors play a pivotal role in the commercial food service industry’s use of sanitary sewer systems and onsite wastewater systems. Food service establishments (FSE’s) such as restaurants, convenience stores, and supermarkets prepare food that produce fats, oils, and greases, simply referred to as FOG. Hundreds of thousands of FSE’s produce billions of pounds of FOG on an annual basis, posing a potentially devastating threat to onsite and public sewer systems everywhere if not effectively trapped and extracted. This webinar aims to provide an educational overview of topics such as types of food service establishments, the different kinds of grease interceptors, and the various methods for sizing them. Also covered during the presentation is a brief overview of the regulatory landscape, and finally how to properly operate and maintain a grease interceptor.
